Taco Truck Salsa Verde

Ingredients
1 zucchini, chopped, about 2 c of chunks
2 whole scallions, chopped
1 garlic clove
3 Tbsp lime juice
3 Tbsp olive oil
½ tsp kosher salt
½ tsp ground cumin
1 c cilantro, chopped
¼ jalapeño, optional
Directions
Blend in a high-speed blender until creamy.
Remove to a jar; it will keep refrigerated for 3 days.
Serve drizzled over tacos, or as a dressing over roasted chicken or vegetables.
Notes
Substitute the cilantro and cumin with any of your favorite fresh herb and spice combinations, such as basil and oregano.
