Carrot Cake Overnight Oats

Ingredients
½ c rolled oats
½ c shredded carrot
2 Medjool dates, pitted and chopped
1 Tbsp ground flaxseeds
1 Tbsp pumpkin seeds
1 tsp ground cinnamon
pinch ground nutmeg
½ c unsweetened almond milk
½ c hot water
Directions
Layer the oats, carrot, dates, flaxseeds, pumpkin seeds, cinnamon, and nutmeg in a glass jar with a lid. Add the milk. Cover and shake well. Chill overnight or up to two days. For warm oats, just before eating, add ½ cup hot water and stir. For cold oats, add additional milk.
